Dishoom’s restaurants are each based on a unique story set in Bombay, which informs the design narrative. For the seventh restaurant and bar located in Manchester Hall, a Grade II listed masonic lodge building, the story revolves around Bombay’s freemasonry. Original features such as parquet and marble floors and a stained glass transom window were retained, and details from Bombay’s freemasons’ hall and the Theosophical Society were woven into each room’s design. The entrance lobby has an original teak in/out board from a Bombay hospital and a dark wood ‘owner’s desk’, while the Permit room cocktail bar has a Minton-style floor and marble bar front with brass top. The grand Bro. Cursetjee Dining Hall has portraits of significant Bombay freemasons and a colour palette inspired by Britannia & Co restaurant. The restaurant and bar have a mix of marble, dark-stained timber, and mirrored wall panelling, with gingham table tops and bentwood chairs in an Irani-style.
