In a Grade II* listed, former stable block of the Western Transit Shed, our brief was to evoke the strongest possible sense of 1930s Bombay, capturing the distinct culture of Southern Bombay’s Irani Cafés, whilst also celebrating the building’s Victorian industrial heritage.

Our challenge was to balance three potentially contrasting factors: a meticulous attention to authentic detail that would transport the diner to another time and place; the creation of smaller boundaried spaces to communicate accents of the Irani Café experience; and a sense of holism to ensure that Dishoom remained a whole which was greater than the sum of its parts.
